When it’s warm outside, I usually don’t like to eat hearty foods, or really hot dishes. This is a very easy, thrown together salad that I eat for lunch each day. (My Big Salad.) I rough chop ¼ green pepper, ¼ red pepper, ½ tomato, ½ small head of ice burg lettuce, ½ of an avocado, ¼ cucumber, some red onion finely chopped, and some black pepper. If I’m feeling up to it, I may add two Chik Patties from the MorningStar Farms line of veggie foods, or actual cooked chicken. I also add any dressing I feel like each day. The mixture will taste great regardless. It may seem like a lot to cut up, so feel free to cut a lot up at once and bag the mixture into smaller bags and keep in the fridge to eat through the week.
The one thing I don’t actively add is any kind of cheese to the salad. I know it’s tempting to pile on the cheese because cheese is amazing, but that can add an unreasonably amount of calories very quickly, and just about counter act any health benefit eating a salad does for your body. If I want a cheese taste, I’ll opt for a dressing with cheese in it. A favorite of mine is the feta dressing from Trader Joes, or a creamy Caesar dressing in full regular fat variety. I don’t bother with low calorie dressing. It usually tastes horrible. I’m not interested in suffering.
Feel free to add any of your favorites to your own mixtures: whether it’s fruit, seeds, olives, carrots – whatever, make it delicious, and make it yours.
Happy Father’s Day to all the great Dad’s out there who are giving ice cream before bedtime behind Mom’s back. It’s totally cool, she will never find out. And to all those without their father today who may be struggling, know there is a Father in heaven who will always love you unconditionally, even if you eat the last cookie in the jar. 😎
Life goes by so quick to that we often forget to take a moment for ourselves. This goes beyond wanting time for a glass of wine. We stand in front of the mirror and think, “I wish I had a better ___.” “I wish I could ____.” The list is endless. We often wish, hope, and pray for a better version of ourselves, our lives, our partners – anything to dull the pain, curb the addictions, subdue the tears. We may be surrounded by negative people, toxic relationships, or a toxic mindset. It’s time to break the cycles we find ourselves in.
You are worth it, and there are people who care and will support you. You are the first step in the process. Do not be discouraged by obstacles of any kind. You are a lot stronger than you think.
Let today be the first day you start over. Remind yourself every day that you are worthy. You are favored. You are loved. You will succeed. Print that out and place it on all your mirrors if you have to. Let’s work harder to spread love and peace than division and hatred.
I’ve heard quite a few times lately how “hard” macaroni and cheese is to make, or how “time consuming” the process is. I usually ask what kind of mac & cheese they are used to making or eating, and for the most part if it isn’t that heavily processed “easy mac,” it’s a variation of some southern recipe of mac & cheese. I can’t stomach either kind. The easy mac usually makes a not so easy and quick exit, as does the heavy, and greasy southern style option. >Shudder< I offer you a simple, anyone can do it, style that is cost effective, can be decreased or increased depending on your needs, and easy to customize to your preferences.
