Buffalo Chicken Chili? Extra Yum

I came across this recipe known as “Buffalo Chicken Chili” by the group known as Tasty on Facebook.  I’m sure you have seen many of their creations shared or liked by your friends and family on there.  It seemed simple enough and tasty enough to give it a try (especially if you are looking for something to make for an upcoming Super Bowl party).  It also included my favorite kitchen tool:  the Crockpot.  If you don’t own one or barely use yours, you are missing out!  The original recipe is listed below but I added my comments on how I modified it.

Buffalo Chicken Chili:

1.5lb chicken breast [I personally do not like cooking or eating chicken breast.  It has no flavor, nor does it hold flavor.  I opted for half chicken thighs and half chicken tenders(not the breaded kind).  When I make it again, I’m using all chicken thighs.  If you choose to use chicken thighs, watch how much salt you add in the rest of the recipe.]

1 packet (1 ounce) ranch seasoning

1 onion diced [I went with a large white onion [my favorite to cook with] 

3 ribs of celery chopped [I ended up using 4] 

14 ounces (1 can) tomato sauce

14 ounces (1 can) crushed tomato

2 Tbsp minced garlic [I used garlic powder instead.  It didn’t affect the flavor in the end.]

1 can of white beans [When I make this again, I’m going to buy a second can of white beans.  One can wasn’t enough.] 

1/2 cup of hot buffalo sauce [I bought mild buffalo sauce and used almost 3/4 cup instead.  Buffalo sauce can be very spicy.  I like spicy but for a mixed crowd I also go more mild.] 

2 cups chicken broth

Salt & black pepper to taste [I don’t think it needs it but you may want to add some.]

How to combine:

I added 1 teaspoon of oil to the bottom of my Crockpot so the chicken wouldn’t stick.  After you place the chicken in then throw everything else into the Crockpot and either cook on high for 4 hours, or low for 8 hours.  Once completed, remove the chicken and shred it with two forks then add the shredded chicken back to the Crockpot for another 20 minutes.  Once that’s complete you can turn the Crockpot on warm and serve.

We ate it with tortilla chips and bleu cheese.  It was delicious!  I’ve heard of some eating it with feta cheese instead and enjoying it or no cheese at all – it’s very versatile and smells amazing!
